
Ingredients:
-Tallow or olive oil for frying
-500g lamb, diced
-1 onion
-1 large or 2 smaller sweet potatoes, diced
-2 small carrots, diced
-1 can of butter beans
-1 Tablespoon Garam Masala
-1 Teaspoon garlic granules
-1 Tablespoon Celtic salt
-Dash pepper
-2 cups broth/stock
-1 cup hot water
-1/2 cup chopped fresh herbs (parsley, chives, sage, mother of all herbs, oregano – what we have at the time goes in! )
Method:
Heat the tallow in a medium pot. Brown the diced lamb. Add the onion, sweet potato and carrot and sauté. This keeps them from turning to mush. Add the salt, pepper, garlic, garam masala and coat all the contents of the pan in it for 2 minutes. Add the broth, hot water and beans and simmer on medium heat until the meat is tender and sweet potatoes are soft. About 2hrs. Add the chopped herbs and allow to cook through for at least 5 minutes before serving. Enjoy!!
